Hyatt Vivid, Grand Island Resort, Cancún Mexico

I’ve partnered closely with AvroKO Hospitality on various high-impact F&B projects for hotels and resorts across the USA and Mexico. Our work is focused on creating bespoke restaurant and bar experiences that enhance guest satisfaction and drive financial performance. One of our key projects is the built Hyatt Vivid Cancún, where we developed site-specific F&B concepts designed to elevate the all-inclusive resort experience.

In December 2021, Hyatt Hotels enlisted AvroKO Hospitality to collaborate on developing the food and beverage (F&B) experience for their newly built all-inclusive resort brand, Hyatt Vivid Cancún. Tasked with crafting distinctive F&B offerings that aligned with the brand’s vision, the project sought to enhance the overall guest experience with best-in-class concepts tailored to Cancún’s unique location. During the project, my role involved several key areas of development, including:

  • Research and Ideation: Conduct initial research to shape the F&B concepts and align them with the resort’s vision and local influences.

  • Operational Development: Creating operational and training guides to ensure efficient and seamless F&B operations.

  • Menu Development and Beverage Selection: Ensuring menu choices were aligned with the concept while factoring in budgeting and financial feasibility.

  • Guest Experience Enhancement: Designing guest experiences around F&B offerings that aligned with the resort’s brand and created a memorable dining experience.
